Sweet Potato Hash

Sweet potato hash is always a "round two" meal for us. If I have any left over meat that needs using, I usually turn it into hash. The best one I ever made was with leftover chicken, steak, and pork tenderloin. Yummy. The one here, I only had steak to use...still delicious.

Ingredients
Steak (chicken, pork)
   1 onion, diced
   3 cloves garlic
   3/4 cup carrots
   2 sweet potatoes
   1 bell pepper, diced
   1/2 mushrooms
   1 Tbsp italian seasoning
   1 tsp garlic powder
   1 tsp ground sage
   1 tsp fresh sage (optional)

1 tsp fresh basil (optional)
salt and pepper to taste

Add 1 Tbsp oil to a pan on medium-high heat. Add onion and garlic; cook for about 4 minutes. Add the carrot and sweet potato. Cook for 20-30 minutes until the sweet potato gets golden brown on some edges.

Add in the mushrooms and green pepper. Cook until the mushrooms are soft, about 5-7 minutes. Add in the steak and cook about 3 minutes. Add in fresh herbs at the end.

Hope that you try this one because it is quite tasty!

God bless you and your food!

Eat out of the (Balcony) Garden

When Cody and I got married, we moved into an apartment, so we have a balcony for outdoor space. Since I love food, I wanted to be able to use my potted garden for more than just extra oxygen and pretty flowers. Yes, I wanted to eat it. Thus, it is a mix of an herb and vegetable garden.

The different plants I have: rosemary, bell peppers, jalapenos, mint, basil, more basil, and sage. I pick herbs from the garden all the time for cooking. Here's and idea of what I use for certain dishes:

rosemary- meat seasoning/marinades
mint- simple syrups, tzatziki sauce, desserts
basil! - just breathe it in, pizza, strawberry basil smash cocktail, bruschetta
sage- "The Best Tea in Memphis," meat seasoning/marinades
jalapenos- salsa, guacamole, crock pot pulled pork

Anyway, check it out!

" The Best Tea in Memphis"

"The Best Tea in Memphis"
Ginger Sage Black Tea

Update: I got the jar mix from Casablanca (which, I believe, has black tea, dried sage, and dried mint), so now I also add some fresh mint to mine! Also, I made a VIDEO! Check it out!

Cody and I like to eat at a Mediterranean Restaurant here in Memphis called Casablanca. They have a drink that is called "The Best Tea in Memphis." I figured out what the ingredients were so that I could replicate it. The secret.....lots of honey! Yum.
Ingredients
5-6 Black Tea Bags
(I use decaf so that I can drink it at all times of the day....but caffeine may not affect you that much)
1 honey bear
1 lemon
1 chunk of ginger
1 handful of sage

Directions
Peel the ginger (use a knife, the back of a spoon, or a vegetable peeler). Then, cut it into a few big chunks.

Add the ginger to about a gallon of water and bring to a boil. Boil for about 15 minutes.

Turn off the heat. Tear the sage and add it to the pot.
(I have a huge pot of sage growing on our balcony, so I just go out and pick it. So fun.)
Add the black tea bags, and let them steep for about 4-5 minutes.

Pour it into a jug. Here, you have an option: pour through a sieve to remove the sage and ginger OR leave them in. If you leave them in, the end of the batch will have a crazy bite! Good stuff.

Add in the honey bear and stir. I usually add the lemon to my individual glass of tea, but you can always squeeze it in now. Put it in the refrigerator until it cools off. If you are hasty like me, just pour some over ice and try it.

Drink up!

God bless you and your food!
